Eggplant Supreme

Stirfry 1/2 bag frozen green beans in 1 T, olive oil over medium high heat for 4 mins.

Put green beans into bowl, and saute egg plant cut up in 2T olive oil.  Add 1/2 c water, cover and cook over medium high heat until egg plant tender.

Move egg plant mixture to boal, saute chopped onion in pan. Add green beans, then add egg plant mix.

Mix 8 oz can tomato sauce,  1/8 c Japanese Mirin, 1 T, garlic powder, pinch of turmeric in a small bowl.  Add to pan and still well; simmer 20 mins.

Boil bag of instant rice in sauce pan with 1-2/3 c water and simmer for 20 minutes.

When rice done, add egg plant mix and stir together well.  Plate a spoonful and enjoy.
