Air-fried Eggplant

Cut 1 egg plant into 1/2″ slices.

Dip each slice in an egg batter that has been fork-beaten with a dash of salt & pepper, and 2T. milk or 1/2 & 1/2.

Roll both sides on to plate with 1/2 c. flour.

Place in airfryer basket in a single layer if possible.  Fry at 380 degrees for 15 mins. After 7 mins, pull out and turn slices over then re-insert to finish the balance of the time.

End of fifteen mins, pull basket out and place contents on plate.  Perfect fried eggplant without the oil – done only in air.  So delicious, and non-greasy.
